Spanakopita, a culinary masterpiece with a rich history, is a beloved Greek dish that has been enjoyed for centuries. Its origins can be traced back to ancient Greece, where it was known as "plakountas tetyromenous" or "cheese and leaf pie."


Spanakopita showcases the beauty of Greek cuisine, highlighting the harmony between fresh ingredients and exquisite flavors. At its heart is the vibrant combination of spinach and feta cheese, perfectly seasoned with a blend of aromatic herbs like parsley, dill, and fennel. Ingredients:

1 package of phyllo pastry

150 g of melted butter

500 g of fresh spinach

250 g of crumbled feta cheese

10 green onions

3 chopped onions

1 bunch of fresh parsley

1 bunch of fresh dill

1 bunch of fresh fennel

Salt and pepper to taste


Instructions:


1. Preheat the oven to 200°C (400°F), and let's get started!


2. In a large mixing bowl, combine the chopped onions, fresh spinach, crumbled feta cheese, green onions, parsley, dill, and fennel. Give it a good mix, ensuring all the flavors meld together perfectly. Season with salt and pepper to your liking.


3. Now, it's time to assemble our spanakopita masterpiece. Lay out a sheet of phyllo pastry on a clean, dry surface. Take a moment to appreciate its delicate texture and the anticipation of the delicious layers to come.


4. Using a brush, generously coat the phyllo sheet with melted butter, making sure to cover every inch with its golden goodness.


5. Carefully place another phyllo sheet on top of the first one and repeat the butter-brushing process. Continue layering the phyllo sheets, applying butter between each layer, until you've stacked half of them.


6. Spoon the spinach and cheese mixture onto the layered phyllo, spreading it evenly to ensure every bite is packed with flavor.


7. Continue layering the remaining phyllo sheets on top of the spinach and cheese mixture, buttering each sheet as before. Remember, this is where the magic happens—the crisp, golden exterior that will make your taste buds dance with joy.


8. With a sharp knife, gently cut the spanakopita into desired shapes—squares or triangles—enhancing its visual appeal and making it easy to serve.


9. Before sending our creation into the oven, give each piece a final touch of butter, ensuring a beautiful, golden finish.


10. Place the spanakopita on a baking sheet and let it bake in the preheated oven for 10 minutes. Then, reduce the temperature to 160°C (325°F) and allow it to cook for another 40 minutes, or until the phyllo pastry achieves that perfect crispness and enticing golden hue.


11. Once your kitchen is filled with the delightful aroma of freshly baked spanakopita, carefully remove it from the oven. Exercise a bit of patience, allowing it to cool for a few minutes—trust us, it will be worth the wait.
